Preheat the oven to 400°F.
Cut the 2 russet potatoes into small chunks. Toss with 1 tbsp olive oil, 1 tsp salt, and 1 tsp Butcher Box seasoning.
Dice the 1 beefsteak tomato, 1 red onion, 1 small iceberg lettuce, and 3 pickles. Set aside. Cut the 2 burger buns into chunks.
In a bowl, mix 1 lb ground beef with 1 tbsp Butcher Box seasoning. Form into small meatballs, then flatten into mini burger patties.
Mix 1/2 cup Greek yogurt, 1/2 cup ketchup, 2 tbsp mustard, 2 tsp Butcher Box Steak Seasoning, and 1 chopped pickle in a bowl.
How to Cook 🍳
Bake the potatoes: Spread the seasoned potatoes on a sheet pan and bake for 30 minutes.
Cook the burgers: Heat a skillet over high heat and add 2 tbsp olive oil. Cook the mini burgers for 1-2 minutes per side. Remove from the pan and set aside.
Sauté the onions: Lower heat to medium-high, add 1 tbsp olive oil, and cook the sliced onions with 1 tsp Butcher Box seasoning until browned (about 5 minutes). Set aside.
Toast the bun chunks: Add the 2 burger bun chunks to the pan with the sautéed onions and toast until golden brown.
Assemble the bowl: Start with a base layer of chopped iceberg lettuce. Arrange mini burgers, sautéed onions, toasted bun chunks, diced pickles, diced tomatoes, and a drizzle of burger sauce around the bowl.
Enjoy your Healthy Burger Bowl!
