Marinate the Steak : Strip the leaves from the thyme, oregano, and rosemary, then finely mince them. Mince the garlic as well. In a small bowl, mix the herbs, garlic, olive oil, and Steak Seasoning. Season with a pinch of salt and fresh pepper. Rub the steak with the marinade, place in a shallow dish, cover with plastic wrap, and marinate for 1 hour.
Place the baby potatoes in a pot and cover with water, add a pinch of salt and bring to a boil, cook until tender, drain, and set aside.
How to Cook 🍳
Preheat the oven to 450F
Cut the boiled potatoes in half.
Toss with olive oil and a pinch of salt.
Spread in a single layer on a baking sheet and roast until golden and crispy, about 40 minutes, flipping once halfway.
While roasting, mince the dill and garlic to toss with the potatoes later.
Stem, seed, and coarsely chop the jalapeños and bell peppers.
In a food processor, combine the peppers, shallot, garlic, cilantro, vinegar, sunflower oil, sugar, and salt.
Pulse until smooth and adjust seasoning as needed.
Preheat a grill pan or sauté pan until hot.
Cook the steak for about 3 minutes per side for medium-rare, or to your desired doneness.
Remove from the pan, cover, and rest for 10 minutes.
Once the potatoes are crispy, toss them with the minced dill and garlic for a fresh finish.
Thinly slice the steak against the grain. Arrange the steak on a platter with the crispy potatoes. Serve with the Green Ajika sauce on the side or drizzle some over the steak.
