Directions
Prep 🥒
In a bowl, mix 1 cup of shredded cabbage, ½ cup of julienne carrots, ¼ cup of red onion, and ¼ cup of chopped cilantro or scallions.
In a small dish, whisk together 2 tablespoons of Greek yogurt, 1 tablespoon of lime juice, 1 teaspoon of apple cider vinegar, ½ teaspoon of honey, and a pinch of salt and pepper. Pour over the veggies, toss well, and let sit while prepping the tacos.
In a bowl, mix 1 pound of ButcherBox ground beef with 1 tablespoon of ButcherBox BBQ Rub Sweet & Smoky. Divide into 6 equal portions and form into small balls.
How to Cook 🍳
Heat a cast-iron skillet over medium-high heat. Place a tortilla on the skillet and press one portion of seasoned beef onto one side of the tortilla. Let it cook beef-side down for 2-3 minutes until golden and crispy.
Flip and cook for another 1-2 minutes until the tortilla is crispy and the beef is cooked through.
Sprinkle ½ cup of shredded cheese over the warm tacos.
Top each taco with the prepared slaw, fresh avocado slices, and ½ cup of salsa or pico de gallo. Add jalapeños and extra lime wedges for an extra kick!
