Ingredients
- 1 lb heirloom carrots (peeled, halved lengthwise if large)
- 2 tbsp olive oil
- Salt & pepper, to taste

2 tbsp Truffle Shuffle Brown Butter Truffle Honey
- 1 tbsp unsalted butter
- 1 tsp fresh thyme leaves (plus more for garnish)
Directions
- Preheat oven to 400°F (205°C).
- Toss carrots with olive oil, salt, and pepper. Spread evenly on a baking sheet.
- Roast for 20–25 minutes, flipping once, until tender and caramelized.
While carrots are roasting, make the warm glaze:
In a small saucepan over low heat, melt the butter.
Stir in Truffle Honey and thyme, warming gently for 1–2 minutes until aromatic (don’t boil).
- Remove carrots from oven and immediately toss or brush with the warm truffle honey glaze.
- Garnish with extra thyme leaves and a pinch of flaky salt if desired.
