Hey everyone, Chef Jason here! Get ready to savor our Ultimate St. Louis Style Spare Ribs. Ingredients

2 pounds St. Louis pork ribs

3 tablespoons Sweet & Smoky BBQ Rub

½ bunch cilantro

2 ounces cotija cheese

2 ounces Mexican crema
-
1 lime
-
Balinese Truffle Salt

3 tablespoons Tajin

2 ears sweet corn

8 ounces your favorite BBQ Sauce

Cutting board

Knife

2 small mixing bowls

Zester, microplane, or cheese grater

Homework: 24 Hours Before You Cook ✏️
Rub that rack of ribs down with the Sweet & Smoky BBQ Rub. Use the whole packet and get it nice and evenly coated!! Cover and refrigerate until you cook.
Prep 🥒
10 minutes before you start: please remove the ribs from your refrigerator and set aside to temper
Fire up that BBQ! While it heats up, we have a couple prep projects to tackle!
Chop the cilantro.
Break up the cotija cheese.
To finish the crema, zest in one lime then squeeze in half of the lime’s juice and add a pinch of Balinese Truffle Salt. Stir in the Tajin spice to taste–but be brave!!!
Whisk well and adjust the seasoning to taste.
Slather the ribs in BBQ sauce.
Shuck the corn.
How to Cook 🍳
Once the grill is nice and hot, slap those saucy ribs on the grill and flip every once in a while until nice and tender - we’re going medium/low heat on this, y’all!
Once the ribs are almost done, start grilling the corn until slightly charred in some places and nice and tender all over.
Slather the corn with the crema we made and top with chopped cilantro and cotija cheese!
Once the ribs are done, remove them from the grill and let rest for 10 minutes on the cutting board. Carve, season with Sweet & Smoky BBQ Rub and you’re ready to dive in!
