Preparation 🥒
Preheat your oven to 400°F
Slice the tomato into 6 slices.
Cut mozzarella slices in half to make 4 smaller pieces. Set aside.
Peel and cut sweet potatoes into chunks, placing them in a pot of water.
Slice each chicken breast lengthwise, creating a pocket (like a book).
How to Cook 🍳
For the Chicken 🐔
Season both the inside and outside of the chicken with salt, pepper, and Lemon Pepper seasoning.
Fill each chicken breast with 3 slices of tomato, 2 pieces of mozzarella, and several basil leaves. Fold to close.
Heat 1 tbsp olive oil in a skillet over high heat until it smokes.
Sear the stuffed chicken for 2 minutes per side.
Transfer the skillet to the oven and bake for 10 minutes.
Remove from the oven and let the chicken rest for 5 minutes before serving.
For the Sweet Potato Mash 🥔
Bring the pot of sweet potatoes to a boil. Cook for 10 minutes or until tender.
Drain the water and return the sweet potatoes to the pot.
Add butter, Greek yogurt, maple syrup, salt, and pepper. Mash until smooth.
Plating and serving 🍽️
Plate the stuffed chicken, squeezing fresh lemon juice over the top. Serve a generous portion of sweet potato mash on the side. Enjoy your healthy and delicious meal!
