Ingredients

½#shrimp
- 1 pack 8” rice papers
- 1/2 # mung beans
- ½ bu cilantro
- ½ bu thai basil
- ½ bu mint
- 1 each jalapenos
- 1 ea watermelon radish
- 1 bu red leaf lettuce
- 1/2 cup peanut butter
- ¼ cup soy sauce
- ¼ cup rice wine vinegar
- ¼ cup sesame oil

1 pack S&P Seasoning
- 1 pack crispy shallots
- 1 ea lemon

Cutting board
- Knive
- 2 medium size mixing bowls
- Small mixing bowl
- Sheet Tray
- Peeler
- Small sauce pot with lid
- Strainer
- Plate
- Paper towel

PREP 🥒
Fill the sauce pot with water and bring to a boil, blanch mung beans for 2 mins, strain, place in a bowl, season with sesame oil and place in the fridge to cool.
Fill the sauce pot with water once again and bring to a boil. While water is coming to a boil, remove shrimp from the package onto a plate with a paper towel and season with S&P Seasoning. Once water has come to a boil turn heat off, slice lemon in half, squeeze the juice and place into the boiling water. After the water has stopped producing bubbles, place shrimp into the pot, cover and let poach for 4 mins. Place poached shrimp onto a plate and cool in the fridge.
- Pick herbs and mix into a herb salad
- Clean and leaf out lettuce
- Slice jalapenos and watermelon radish
In a small mixing bowl combine peanut butter, soy sauce, and rice vinegar. Add water until nice and saucy. Season with S&P Seasoning. This is the dipping sauce
- Let's roll it up!!! Grab your sheet tray and add a few drops of water to it to keep the rolls from sticking.
- Dip rice paper in warm water and make sure it is completely submerged in water. Lay down on your work service, add a little of each ingredient and roll nice and tight.
- Eat as you roll, dip into sauce, and enjoy!!!
